Food of the Week - Artichokes
Artichokes are a good source of Vitamin C, folic acid, magnesium and fiber and they are just 25 calories. When selecting artichokes, look for heavy ones. Also, select those that have thorns at the end of their petals as they have bigger hearts and are better to eat than the thorn-less varieties (just like people). Store them in the crisper section of the fridge and eat within one week. Use a sharp knife to cut the stem at the base and top off. To prepare boil in three inches of water for 25 to 40 minutes depending on size or steam on a rack over boiling water in a covered pot for the same amount of time. Drain them well, pull the petals back and remove the purple tipped center petals and fuzzy choke with a spoon. You can pull the petals off and dip in a sauce or dressing. Put the base of the petal in your mouth and bite down gently. Then when you get to it, enjoy the artichoke heart. You can also dip the petals and heart into good quality balsamic vinegar. Artichokes are fun to eat! You can stuff the big ones with tuna or pasta (make it whole wheat pasta). You can eat the medium sized ones as they are. And the baby ones are completely edible, so you can sauté or roast them - just pop them in your mouth.
